Vanilla Bean Chia Seed Pudding

Super refreshing yet filling at the same time. You can never go wrong with starting your day with a Chia seed pudding!

Vanilla Bean Chia Pudding

Step 1

Combine 5 Tablespoons of White chia seeds and 2 cups of Coconut milk (I use fresh coconut milk, not the canned version)
Slice your vanilla bean from top to bottom lengthways in the centre and scrape the seeds out. Add that in to the mixture along with 1/2 tsp of vanilla essence.
If you like your chia pudding a little sweeter you can also add 1 x Tbsp of maple syrup here.

*For future, ratio is 2.5 Tbsp Chia to 1 x Cup of Milk

Step 2

Keep stirring to avoid all the chia seeds going to the bottom, I keep doing this every couple of minutes until I feel they have expanded enough.

Step 3

Transfer to your dish of choice and let it sit in the fridge preferably overnight.

Step 4

When you wake up top with your favourite fruits and spices! For my V-day dish I used strawberries, raspberry chia jam, quinoa puffs and a sprinkle of cinnamon!
