Avocado Chocolate Mousse

As healthy as mousse is ever going to get! To make this dish extra special I added dried rose petals. You can buy these at any local Naked Foods.

SWEET POTATO TOAST TOPPERS-11

Step 1

In a large food processor combine…
– 2 x ripe avocados (chop them into little cubes)
– 1/4 cup of raw cacao powder
– 1 x tbsp cacao butter
– 2 x tbsp coconut sugar
– 1/2 tsp vanilla essence
– a small shot of coffee espresso (optional)

Let this combine till the mixture is super fluffy and creamy! Usually takes a few minutes.

Step 2

Melt your 100 grams of dark chocolate.
Try not to do this in the microwave, it can tend to over heat and turn bitter. Instead, use a heat proof bowl over a pot of boiling water OR what I do is break the cubes up and pop them in the oven for 5 minutes in an oven dish and then stir once melted

Step 3

As your mixture is combining, slowly add your melted chocolate.

Step 4

Transfer your mousse to your desired small dishes and pop them in the freezer for 5-10 minutes. Taste to see if you like the sweetness, if you want it a little sweeter stir in a little bit more of your coconut sugar.

Step 5

Once the mousse is ready, top with crushed hazelnuts, frozen raspberries (texture is SO much better!) and some desiccated coconut!
