I’ve been wanting to work on a pesto for a while now that omitted parmesan but still had that cheesy flavour and today I finally had the chance to nail the recipe! (if I do say so myself) I really love the flavour of this pesto as it’s not too over-bearing, but strong enough so that you can really taste the flavours. And of course for the pasta I used my fav – San Remo Pulse Pasta (HEAVEN!)
It takes about 15-20 minutes to make, but if you’re prepping your pesto on Meal prep day then this baby will be one of your fastest feeds yet!
Here’s what you will need;
– 2 cups fresh basil (leaves)
– 1 handful of fresh rocket
– I handful of baby spinach
– 1/3 cup Pine nuts + extra to sprinkle through at the end
– 1/3 cup Olive Oil
– 2 cloves of Garlic (chopped up)
– 1 tbsp Nutritional Yeast
– 1 teaspoon Pink Salt
– 1 x pack of San Remo Pulse Pasta (or regular spaghetti if you are not GF!)
Step 1 – Bring a pot of salted water to boil and cook your pasta! Once cooked, strain and rinse under cold water (this stops it from breaking apart and over cooking!)
Step 2 – In a small food processor blend together your basil, rocket, baby spinach, pine nuts, olive oil, garlic, nutritional yeast & salt.
Step 3 – In a large bowl, mix your pesto through your pasta and then add some extra whole pine nuts… and BOOM, you’re done!!!!
