Oh my goodness, it has been WAY too long.
If you follow me on instagram (@notinmybelly) then you would know that I have just finished up on a 2 month contract that literally took over my life! I had very little free time, which meant – no new recipes 😦
I am here to tell you… I am B A C K !
And boy do I have a recipe for you.
MAC-INGTON Bliss Balls! Yes, these babies taste exactly like a Lamington, but are made using macadamia nuts! Here’s how you can make them yourself…
YOU WILL NEED…
- 1 cup macadamia nuts
- 1 cup shredded coconut
- 1/4 cup almond meal
- 1 teaspoon vanilla essence
- 4 x pitted dates (soaked in warm water for 5 mins)
- raw honey
- 1/4 cup cacao powder (coating)
- coconut oil (coating)
- extra shredded coconut (coating)
HERE WE GO!
Start by soaking your dates for a few minutes in warm water, make sure you remove the pitts!
To make the ball, blend together the macadamia nuts, shredded coconut, almond meal, dates, honey (1 x tablespoon), melted coconut oil (1 x tablespoon), vanilla essence (1 x teaspoon) and the dates.
Once blended, make them into balls using the palms of your hands and then pop them in the fridge for 20 minutes.
While the balls are in the fridge I like to 1) clean up all my mess first! (makes it so much easier at the end) and 2) I make my coating mix!
Add 1/4 cup of coconut oil, 1/4 cup of cacao powder and a table spoon of honey to a small sauce pan. Heat it on the stove until it is melted through and runny like melted chocolate!
Once that is done, set up your “rollin'” station like so!
First add the ball to the chocolate, and then roll in the coconut shreds, then place on a small tray or plate!
Freezing these babies makes them last a few months… that is, if you don’t devour them all before then! Other wise just keep them in the fridge for the week!
