This Easter our family decided to do a Sunday Lunch where everybody brings a couple of plates of something! When I thought of what I could bring that was quick, easy and healthy to make, chocolate bark was first on the list!
I like to call this my “cheat” version – for the purpose of saving time! I bought my 100% chocolate from my local Naked Foods instead of making it from scratch (I’m still trying to perfect that!)
First you must decide what nuts, seeds or fruit you would like to mix in! I went with…
- Roasted Almonds
- Hazelnuts
- White Chia Seeds
- Dates
- Frozen Raspberries
Start by crushing your nuts! You can do this various of ways, I like to gather my nuts on a chopping board and then I throw a tea towel over the top. Then, using the flat part of a large knife blade, I press down hard with the palm of my hand and crush. Alternatively you can also use a rolling pin, a large flat spoon or a hammer if you don’t have neighbours who will hate you for the noise!
Once you have all your nuts crushed, mix them all together with your Chia seeds in a bowl!
Now to melt your chocolate!
Lots of people do this different ways and if you have a way that works for you then go ahead! I like to melt my chocolate by putting it into a oven proof ceramic dish and heating for 5 minutes/until melted. If you like doing it over boiling water then that works too! Just do NOT, I repeat, do NOT microwave! You can risk burning and curdling your chocolate!
While your chocolate is melting do the following;
- Remove the pip from your dates and start cutting them up into little squares (like little gummies!)
- Get your frozen raspberries ready.
- Line a flat baking dish with baking paper
Once you’re chocolate is ready to go, set up your work station like the image below!
Spread your chocolate onto your baking dish nice and even! Doesn’t have to be perfect, remember the more imperfect the more artistic and personal your bark becomes 🙂 be creative! Now start sprinkling your nut & chia mix!
Now sprinkle your dates and your raspberries!
Once that is done pop it in the fridge (or freezer) for an hour and you are set!!!
