Having a Portuguese background basically means I’ve been eating chicken my whole life. So I thought it would be crazy of me not to share my go-to chicken meal for during the week!
I know buying “Organic” can at times mean selling your arm and leg to be able to afford it. But as a rule for myself, I will always buy my meat organic so that I know that it is hormone free, anti-biotic free and free of pesticides. So I truly recommend where you can, to buy your meat organic! In terms of vegetables, do what you can afford. At the end of the day – your gut is going to be happier digesting an “un-organic” avocado than a happy meal.
Now when I cook this dish at home I like to fry AND bake my chicken, when my partner does it, he just fries it! So it’s up to you how you like to cook your chicken, I’m just the overall cautious person who tears my chicken to shreds for fear of it being undercooked! (FYI if you have a thermometer, the safe internal temperature for white meat is 75°C – 165°F)
Here’s my go-to chicken dish!
Pre-heat your oven to 180°C. Start by preparing your sweet potato fries, recipe for them here! Once you have them in the oven, prepare your chicken by rinsing it under cold water and removing any un-wanted fat. On a seperate chopping board, cut up 2 x cloves garlic.
Place your chicken in a dish and add 2 x tbsp of olive oil, 2 x tbsp of paprika & the garlic (if you like it with a little more kick, add some chilli powder or cayenne pepper). Using your washed hands, start massaging all the spices into the meat. Heat up a fry pan with a little bit of olive oil, once hot, place the chicken and fry on both sides for 5-10 minutes, or until your desired crispiness.
Using tongs, transfer your chicken from the pan into an oven dish, add a sprig of fresh rosemary in the centre, cover with aluminium foil and pop in the oven. You will leave this here for another 25 minutes – set a timer!
While your chicken and sweet potato chips are in the oven, wash all of your vegetables throughly and chop them all up, mix them all up in a large bowl and dress with a generous amount of olive oil and lemon juice from your lemon! Top with sesame seeds, pumpkin kernels and salt & pepper.
Once the timer is up, take your chicken and sweet potato chips out of the oven! Let it rest for 5 minutes and then serve up!
