HOW TO MAKE LETTUCE LEAF TACO’S!

You say Taco Tuesdays, I say Taco WHENEVER THE HELL I WANT DON’T MAKE ME FEEL GUILTY.

Mexican is one of those cuisines that’s easy to manoeuvre around if you’re Gluten Free because most of the tortillas and chips are made out of corn! You should always check though, because they aren’t always, especially when you eat out or buy at your local woolies, so it’s good to be sure. If you’re Dairy Free as well then… I am so sorry. I feel your pain, they put cheese on every thang.

This recipe is for those who LOVE a taco, but are also wanting to eat whole foods and less processed packet bought foods. This means no corn chip shells and no packet bought “taco seasoning” (that stuff is almost always full of numbers and words I cannot pronounce)

Firstly, cut the root off your Cos (also known as Romaine) lettuce and seperate the leaves, wash them each separately and leave to dry on a table cloth.

Then chop up all of your vegetables for your meat and for your toppings (I fried my mushies up before hand, makes it soooo good)

Seperate your spices onto a plate so that you make sure you don’t miss anything. How much you put of each spice is based on your own personal taste so feel free to adapt as you go and taste test as well once the meat is cooked to see if you should add more of anything in particular. I put…
– 1 tsp paprika
– 1 tsp dried oregano
– 2 tsp cumin
– 1 tsp salt (pink Himalayan)
– 1 tsp black pepper
I also add fresh cut chilli, brown onion and garlic. If you don’t have them fresh you can use the powder form too! But if I’ve got the veggies, I will use them first!

Heat up the pan and drizzle a little bit of olive oil. Brown your onion and garlic for 2 mins and then add your meat! Once the meat is brown add in your DIY seasoning and fresh chillies and 1/3 cup of water. Simmer until all the water is absorbed.

Once the meat is cooked and you have your toppings sorted. You are ready to go! Taco night is a success!!! Also, if you feel like getting even more creative change your fresh avo to guacamole! I hope you enjoy this dish as much as I do!
